A classic old-fashioned carrot cake recipe. Optionally, you can garnish with additional chopped nuts or shredded coconut. Slice, serve, and enjoy your delicious old-fashioned carrot cake! Feel free to adjust the ingredients to suit your taste. Enjoy baking!
Carrot Cake

Recipe:
4 eggs
2 cups sugar
small jar strained baby carrots (Gerber's)
small can crushed pineapple, drained
1/4 cup cooking oil
1 cup chopped walnuts
1 cup raisins
Mix the above ingredients together.
Add:
2 cups flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon vanilla
Add and mix to mixture above. Pour into a greased 13 x 9 x 2 inch baking pan. Bake at 350 degrees for 55 minutes. Cool then frost.
Frosting:
4 oz cream cheese
1/2 stick of butter or margarine
1/3 - 1/2 box 10x sugar (confectioner's)
