Cashew brittle is a delicious, crunchy confection made primarily from roasted cashews and a sweet, caramel-like sugar syrup. The process typically involves cooking sugar until it reaches a molten state, then mixing in butter and corn syrup to enhance the flavor and texture. Once the mixture reaches the right consistency, roasted cashews are folded in, giving the brittle its distinctive nutty flavor. The result is a delightful treat that combines the rich, buttery taste of caramel with the earthy crunch of cashews.
Cashew Brittle

Recipe:
1 cup sugar
1 cup butter
2 tablespoons light corn syrup
1 1/2 cups salted cashew pieces
In a 2 quart saucepan combine sugar, butter, and corn syrup. Cook over low heat; stirring occasionally, until (candy) thermometer reaches 290 degrees (25-30 minutes). Remove from heat, stir in cashews. Spread to 1/4 inch thickness on waxed paper lined baking pan. Let cool completely, then break into pieces.
