Mommom's lemon squares are a delightful treat that perfectly balances sweetness and tartness. These lemon squares are perfect for a sunny afternoon or as a delightful end to any meal, and they remind everyone of the love baked into every dish she makes.

Lemon Squares

Recipe:

1 cup of butter

4 eggs

2 1/3 cup flour

1/2 cup plus 1 tablespoon confectioner's sugar

1 3/4 cup granulated sugar

1/3 cup lemon juice

1/2 teaspoon baking powder


In a mixing bowl, cream butter and 1/2 cup confectioner's sugar. Add 2 cups flour and stir well. Put evenly in a 9 x 13 inch pan and up sides. Bake at 350 degrees for 20minutes. Combine eggs, granulated sugar, remaining 1/3 cup flour, lemon juice, and baking powder, beat well. Pour onto first layer in pan. Bake another 25 minutes. Let cool. Sprinkle with remaining confectioner's sugar. Cut into squares.
