For a delightful twist on classic cookies, try this recipe that offers a unique flavor beyond chocolate chip or sugar cookies. This delectable treat is perfect year-round and has been cherished throughout the years, especially by my Aunt Deb, who was passionate about baking and experimenting with new recipes.
Zucchini Cookies

Recipe:
1 cup grated zucchini with skin
1 cup sugar
1 egg
1/2 cup oleo (margarine)
1 cup chopped nuts
1 cup raisins
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon cloves
2 cups flour
Mix sugar, oleo, and egg. Add zucchini, then the dry ingredients. Chill at least 2 hours before baking. Drop from teaspoon onto greased cookie sheet. Bake at 350 to 375 degrees for 12 minutes.
