Southern Open-Faced BLTs with Pimiento Cheese

This rich mixture is complemented by layers of juicy tomato slices, crispy center-cut bacon, and vibrant baby arugula, creating a tantalizing medley of flavors and textures. The Southern BLT transforms a simple lunchtime staple into a gourmet indulgence that is both comforting and unforgettable, making it an ideal choice for picnics or casual gatherings!

Recipe:
2 tablespoons bottled pimientos, diced and drained
1 tablespoon onion, grated and peeled
2 tablespoons mayonnaise
1 teaspoon cider vinegar
1/4 teaspoon freshly ground black pepper
4 ounces sharp cheddar cheese, shredded
1.25 ounces fresh parmesan cheese, grated
4 slices of sourdough bread, toasted
12 tomato slices
1/4 teaspoon kosher salt
4 center-cut bacon slices, cooked and halved
1 cup baby arugula leaves
Combine pimientos, onion, mayonnaise, cider vinegar, black pepper, and cheeses in a large bowl. Spread 3 tablespoons of mixture on each slice of bread. Top with 3 tomato slices. Sprinkle salt on top of tomatoes. Add 2 slices of bacon halves and 1/4 cup arugula. Serves 4
